Ingredients
1 tbsp olive oil
1 onion, diced
2 garlic cloves, minced
1 red bell pepper, chopped
1 carrot, diced
2 sausages (sliced or crumbled)
1 can (15 oz) white beans, drained
1 can (15 oz) diced tomatoes
2 1/2 cups low-sodium vegetable or chicken broth
2 cups chopped kale or spinach
1 tsp smoked paprika
1 tsp cumin
salt & pepper to taste
fresh parsley for garnish
Directions
  1. Sauté onion, garlic, pepper, and carrot in olive oil until soft.
  2. Add chorizo and cook until browned.
  3. Stir in paprika and cumin, then add beans, tomatoes, and broth. Simmer 25–30 mins.
  4. Add greens and simmer 5 more mins.
  5. Season and serve with rice or crusty bread
